Bikini Recipe

Yields 10 servings

To make the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Cocktail (produces 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

For the Cordial: Combine all the ingredients in a pan, bring to a simmer, stirring to dissolve. Next, remove from the burner and leave to cool entirely. Pour into a sterilised bottle, seal keeping it in the fridge, it will last for about one month.

To make Premix: Mix all the liquids into one big jug, let it rest for one hour, then pass it through preferably using a fine cloth, making it fully clarified.

To serve: Add 85ml from the premix to a cocktail shaker packed with ice, and agitate carefully for about 60 seconds until cold. Pour into a chilled martini glass or similar, top with the cranberries and finish by giving it a quick spritz with the mandarin essence over the drink.
